just a minute in January

Watching: Rufus and I just finished the last episode of Dr. Who with David Tennant as The Doctor. I may have become a little dramatic... (sobbing heartily while wailing that I didn't want to live in a world where David Tennant isn't The Doctor). We're also catching up on Suits, Fringe, Person of Interest, Girls, and I'm enjoying Elementary on my days off, too.
Reading: The Paris Wife by Paula McLain. I'm really, really enjoying this one! It's not a 'can't put it down' thriller, but it feels like I'm going back to visit old friends every time I pick it up.
Drinking: Green tea with coconut oil, black tea with my favourite honey, and water - always water.
Listening: The Lumineers, Minus the Bear, and The Boxer Rebellion at the moment. I'm also enjoying Alt-J, though I haven't got that one on my iPod just yet!
Loving: Visits from our cat-friend, cooler weather, new recipes, and early morning cuddles.

Speaking of new recipes, have you met the spaghetti squash? I've seen these squashes on various foodie blogs before, and when I saw a little squash sitting all alone at the Farmers' Market in a box marked 'Spaghetti Squash'... well, I knew I had to take the little fella home!

Using this recipe as a guide, I added some garlicky kale, toasted walnuts, chickpeas, chili, and nutritional yeast (in place of cheese) to the roasted squash. The result was hearty, filling, wholesome, and utterly delicious. I picked up another one at the market this week!

    1. We've had three summers in a row now! I'm definitely needing a little bit of cooler weather downtime (but, you know, give me two weeks of cold and I'm longing for hot again...)

  4. I tend to just splosh some tomato sauce on my spaghetti squash, when I make it, but kale would probably work out better...

    Oh, and I'm a Chris Eccleston woman, myself. But everyone has a type ;)

  5. I had recently tried spaghetti squash and just didn't care for it! It always looks so delicious though, especially here. I think I'll give it a try again with this recipe and see how it goes for me...
